A beautiful fougasse bread with herbes de Provence and greek olives. It's a lovely and simple bread perfect to have for a soirée with friends along with a cheese and antipasti plates. Loved it came together in just a day ✨


This recipe is from Maurizio's blog The Perfect Loaf, my go-to site for the best sourdough recipes 😊 simply cut the amounts from the original recipe to half, and anyway got 4 middle-sized fougasses 🌸



Ingredients

432g All-purpose flour

47g Whole wheat flour

60g Pitted, drained, and coarsely chopped kalamata olives

12g Extra virgin olive oil

351g Water

9g Salt

86g Mature sourdough starter (100% hydration)
